Smoked salmon and cucumber twists

ingredients

serves 1.
100 g (3 1/2 oz) cucumber
50 g (1 3/4 oz) smoked salmon
1 tablespoon low fat mayonnaise
1/2 teaspoon horseradish sauce
1 tablespoon low fat plain fromage frais
freshly ground black pepper

method

1. Slice both the cucumber and salmon into six long, thin strips.

2. Twist one strip of salmon around each cucumber stick.

3. Mix together the mayonnaise, horseradish sauce and fromage frais, and drizzle over the salmon and cucumber twists.

4. Season with a light grinding of black pepper
