1. Spray a small frying pan with low fat cooking spray and add the Halloumi cheese slices.
2. Cook them for 2 - 3 minutes on each side until golden.
3. On a large, flat platter arrange the cooked cheese with the tomato slices and cucumber in alternating layers. Scatter over the fresh basil.
4. Mix together the balsamic vinegar and sugar, and drizzle it over the salad.
5. Season the salad with a little salt and a generous grinding of black pepper, and serve.
tip: Use a griddle pan to cook the cheese, if you have one, this way you will get attractive markings across each slice.
