100 g (3 1/2 oz) small pasta shapes
1 green pepper, de-seeded and chopped finely
1 red pepper, de-seeded and chopped finely
1 red onion, chopped finely
425 g (15 oz) canned mixed beans, rinsed and drained
225 g (8 oz) smoked mackerel fillet, skinned
2 tablespoons chopped fresh flat leaf parsley
juice of 1 lemon
salt and freshly ground black pepper
method
1. Cook the pasta according to the packet instructions.
2. Drain well and refresh it under cold water
3. Mix the pasta together with the peppers, red onion and mixed beans.
4. Remove any bones from the mackerel fillet and flake the flesh.
5. Add it to the pasta mixture with the parsley, lemon juice and seasoning.
6. Cover and chill in the refrigerator for an hour before serving.
