Potato salad #3

Calories per serving 140.

ingredients

serves 4.
450 g (1 lb) baby new potatoes, halved
6 spring onions, sliced
100 g (3 1/2 oz) gherkins, chopped finely
4 tablespoons low fat mayonnaise
4 tablespoons low fat plain fromage frais
salt and freshly ground black pepper

method

1. Cook the potatoes in a large saucepan of lightly salted, boiling water until tender.

2. This will take about 10 minutes. Drain them and allow to cool.

3. Toss the cooled potatoes with the spring onions, gherkins, mayonnaise, fromage frais and seasoning.

4. Cover and chill the salad before serving.
