Noodles in a pot

This is a homemade pot noodle, more nutritious and tastes great.

ingredients

serves 1.
25 g (1 oz) fine egg noodles
300 ml (10 fl oz) vegetable stock
25 g (1 oz) frozen vegetarian mince, defrosted
50 g (1 3/4 oz) carrots, diced finely
25 g (1 oz) frozen peas
1 tablespoon tomato puree
1 tablespoon dark soy sauce
2 spring onions, sliced thinly
1 teaspoon cornflour

method

1. Place the noodles in a small saucepan with the stock.

2. Bring to the boil and then add the vegetarian mince, carrots, peas, tomato puree and soy sauce.

3. Simmer gently for 5 minutes and then add the spring onions.

4. Mix the cornflour with a little cold water to make a thin paste and stir this into the pan.

5. Cook, stirring, until the liquid thickens a little.

6. Simmer for 1 minute and then ladle into a soup bowl or mug.
