method
1. Place the noodles in a small saucepan with the stock.
2. Bring to the boil and then add the vegetarian mince, carrots, peas, tomato puree and soy sauce.
3. Simmer gently for 5 minutes and then add the spring onions.
4. Mix the cornflour with a little cold water to make a thin paste and stir this into the pan.
5. Cook, stirring, until the liquid thickens a little.
6. Simmer for 1 minute and then ladle into a soup bowl or mug.
