ingredients

serves 1.
2 thin slices of white bread
25 g (1 oz) low fat soft cheese
25 g (1 oz) wafer thin ham
25 g (1 oz) half fat Cheddar cheese, grated
freshly ground black pepper

method

1. Spread 1 slice of bread with half of the low fat soft cheese and top with the ham.

2. Place the remaining slice of bread on top. Grill both sides of the sandwich until pale golden.

3. Mix together the remaining low fat soft cheese and the grated Cheddar cheese and spread this over one side of the grilled sandwich.

4. Season with freshly ground black pepper and return the sandwich to the grill for 2 - 3 minutes until the cheese melts and starts to brown.

5. Serve at once.
