Chinese style scrambled eggs

ingredients

serves 2.
1 teaspoon sunflower oil
4 spring onions, sliced
100 g (3 1/2 oz) fresh beansprouts
3 eggs
3 tablespoons skimmed milk
1 tablespoon light soy sauce
50 g (1 3/4 oz) cooked prawns, peeled

method

1. Heat the sunflower oil in a small saucepan and add the spring onions and beansprouts.

2. Stir fry for 2 minutes until they begin to soften.

3. Beat together the eggs, milk and soy sauce, and add the mixture to the pan with the prawns.

4. Cook, stirring continuously, until the eggs begin to scramble.

5. This will take about 5 minutes. Serve immediately.
