2 medium slices white bread
2 teaspoons pesto
150 g (5 1/2 oz) cherry tomatoes, halved
1 teaspoon balsamic vinegar
1 tablespoon torn fresh basil
salt and freshly ground black pepper
method
1. Toast one side of each slice of bread until pale golden.
2. Spread the untoasted side with pesto.
3. Grill for 2-3 minutes.
4. Mix the tomatoes with the vinegar basil and seasoning.
5. Spoon the mixture over each slice of pesto coated toast and serve.
