Chilli veggie mince wraps

ingredients

serves 4
1 tablespoon sunflower oil
1 onion, chopped finely
2 garlic cloves, crushed
5 cm (2 inch) piece of root ginger, peeled and grated
225 g (8 oz) vegetarian mince
1 teaspoon chilli flakes
175 g (6 oz) carrots, grated
175 g (6 oz) courgettes, grated
2 tablespoons tomato puree
2 tablespoons soy sauce
12 large green lettuce leaves, such as Webb's lettuce

method

1. Heat the oil in a large frying pan and add the onion, garlic and ginger Cook over a low heat for 5 minutes, stirring, until the onion softens but doesn't brown.

2. Turn up the heat and add the mince, chilli flakes, carrots, courgettes, tomato puree and soy sauce. Stir fry for 5 minutes until piping hot If you wish to freeze this, do it now.

3. To serve, spoon a little of the chilli mince mixture on to the centre of each lettuce leaf and wrap like a parcel.
