Main meal minestrone

ingredients

serves 4.
225 g (8 oz) extra lean minced beef
1 teaspoon paprika
175 g (6 oz) carrots, diced
1 red pepper, de-seeded and chopped
1 onion, chopped
1 garlic clove, crushed
225 g (8 oz) courgettes, chopped
400 g can of chopped tomatoes
850 ml (1 1/2 pints) beef stock
100 g (3 1/2 oz) soup pasta or quick cook macaroni
salt and freshly ground black pepper
2 tablespoons chopped fresh flat leaf parsley, to serve

method

1. Heat a large saucepan, add the mince and dry fry until evenly browned.

2. Stir in the paprika, carrots, red pepper; onion, garlic and courgettes, and cook for 2 minutes.

3. Stir in the tomatoes and stock, and bring to the boil. Reduce the heat, cover and simmer for 15 minutes.

4. Add the pasta and season to taste.

5. Cook for 10 minutes more or until the pasta is tender.

6. Stir in the parsley and serve the soup in four warmed bowls.
