method
1. Heat a large saucepan, add the mince and dry fry until evenly browned.
2. Stir in the paprika, carrots, red pepper; onion, garlic and courgettes, and cook for 2 minutes.
3. Stir in the tomatoes and stock, and bring to the boil. Reduce the heat, cover and simmer for 15 minutes.
4. Add the pasta and season to taste.
5. Cook for 10 minutes more or until the pasta is tender.
6. Stir in the parsley and serve the soup in four warmed bowls.
