Tiramisu

ingredients

serves 4
8 sponge fingers
1 tablespoon coffee granules
3 tablespoons boiling water
1 tablespoon granulated artificial sweetener
3 tablespoons Marsala wine
350 g ml (12 fl oz) 0% fat Greek style plain yogurt
1 egg white
25 g (1 oz) plain chocolate with 70% cocoa solids, grated, to serve

accompaniments (you may need these)

method

1. Divide the sponge fingers between four individual shallow glass dishes.

2. Dissolve the coffee granules in the boiling water; and stir in the sweetener and Marsala wine.

3. Drizzle the coffee mixture equally over the sponge fingers.

4. Place the yogurt in a mixing bowl.

5. Whisk the egg white until it forms soft peaks and fold it into the yogurt.

6. Spoon this over the soaked sponge fingers.

7. Cover and chill the dishes for at least 1 hour or overnight.

8. Sprinkle the top of each tiramisu with grated chocolate. and serve.
