450 g (1 lb) honeydew melon, de-seeded, peeled and diced
2 kiwi fruit, sliced thinly
350 g (12 oz) fresh or frozen raspberries
2 tablespoons artificial granulated sweetener
4 sprigs of fresh mint, to decorate
1. Mix together the diced melon and kiwi slices, and divide them between four individual glasses.
2. Push the raspberries through a sieve to puree them, discard the seeds and stir the artificial sweetener into the puree.
3. Drizzle the raspberry puree over the melon and kiwi fruit, and decorate each one with a sprig of mint.
