225 g (8 oz) quick cook macaroni
low fat cooking spray
225 g (8 oz) courgettes, diced
400 g can of chopped tomatoes with garlic
300 g (10 1/2 oz) peppered mackerel, skinned and flaked
4 spring onions, sliced
100 g (3 1/2 oz) half fat mature Cheddar cheese, grated

method
1. Bring a large saucepan of lightly salted water to the boil and cook the macaroni for about 5 minutes until tender
2. Meanwhile heat a large non stick frying pan and spray it with low fat cooking spray.
3. Add the courgettes to the pan and cook them for 2-3 minutes to soften them.
4. Add the cooked macaroni, chopped tomatoes, mackerel and spring onions to the pan, stir well and heat through for 5 minutes.
5. Spoon the mixture into a flameproof dish and sprinkle the cheese over the top.
6. Grill under a medium heat for 5 minutes and serve at once.
