Spicy gammon and bean hot pot

ingredients

serves 4
low fat cooking spray
350 g (12 oz) lean gammon steak, diced
225 g (8 oz) leeks, sliced
225 g (8 oz) carrots, diced
400 g can of chopped tomatoes
400 g can of mixed beans in chilli sauce
150 ml (5 fl oz) apple juice
1 tablespoon wholegrain mustard
salt and freshly ground black pepper

method

1. Spray a large saucepan with low fat cooking spray and cook the gammon over a high heat for 2-3 minutes.

2. Add the remaining ingredients and bring to the boil.

3. Reduce the heat, cover and simmer for 20 - 25 minutes, until the leeks and carrots are cooked.

4. Serve hot.
