Chili crab noodles

ingredients

serves 2.
150 g (5 1/2 oz) vermicelli noodles
2 teaspoons sunflower oil
1 small red pepper, de-seeded and sliced thinly
100 g (3 1/2 oz) baby sweetcorn, halved
6 spring onions, sliced
200 g (7 oz) canned white crab meat, drained
2 tablespoons sweet chili sauce
2 tablespoons tomato ketchup
1 tablespoon soy sauce
2 tablespoons chopped fresh coriander, to serve

method

1. Place the noodles in a bowl and cover them with boiling water Leave them to stand for 5 minutes and then drain thoroughly.

2. Meanwhile, heat the oil in a pan and stir fry the red pepper and baby sweetcorn for 2 - 3 minutes. Add the drained noodles, spring onions, crab meat, sweet chilli sauce, tomato ketchup and soy sauce, and stir fry for 2-3 minutes.

3. Scatter over the chopped fresh coriander and serve.
