8 x 75 g (2 3/4 oz) chicken drumsticks, skinned
1 tablespoon lemon juice
1/2 teaspoon paprika
For the gremolata
15 g (1/2 oz) fresh flat leaf parsley, de-stalked and chopped very finely
1 garlic clove, crushed finely grated zest and juice of 1/2 lemon
2 shallots, chopped very finely
1 teaspoon clear honey
1 teaspoon olive oil
salt and freshly ground black pepper
method
1. Preheat the oven to Gas Mark 5/l90°C/fan oven 170°C.
2. Line a baking tray with non stick baking parchment.
3. Make 2 - 3 diagonal slits along the top of each chicken drumstick. Lay them on the baking sheet.
4. Mix together the lemon juice and paprika, and brush a little over each drumstick.
5. Roast for 25 minutes, until the chicken is cooked through.
6. Mix together all the ingredients for the gremolata.
7. Serve the cooked chicken with a spoonful of gremolata.
