Cajun chicken goujons

ingredients

serves 4
450 g (1 lb) skinless chicken breasts, cut into strips
2 tablespoons Cajun spice mix
scant 1/2 (us) cup (100 ml) low fat plain yogurt
finely grated zest of 2 limes
2 tablespoons chopped fresh coriander
225 g (8 oz) easy cook rice
75 g (2 3/4 oz) canned sweetcorn, drained

method

1. Place the chicken in a shallow dish.

2. Mix together the Cajun spice mix, yogurt, zest of 1 lime and the coriander. Spoon this over the chicken.

3. Stir well to coat all the strips. Cover and leave to marinate for 20 minutes.

4. Meanwhile, cook the rice in lightly salted, boiling water for 12 minutes until tender

5. Drain and mix the rice with the remaining lime zest and the sweetcorn. Cover and keep warm.

6. Grill the chicken for 12 - 15 minutes, turning frequently, until the chicken is cooked through and slightly browned.

7. Spoon the rice on to four individual serving plates and pile the Cajun chicken on top.
