1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.
2. Sift the flour and baking powder into a mixing bowl and add the salt. Rub in the margarine, using your fingertips, until the mixture resembles fine breadcrumbs. Stir in the caster sugar and sultanas.
3. Make a well in the centre of the flour mixture and pour in the milk. Whisk the egg white until it forms soft peaks, and add it to the well. Fold all the wet ingredients into the dry ingredients and mix to form a soft dough.
4. Roll out the dough on a lightly floured board and cut out ten 5 cm (2 inch) circles. Place the scones on a non stick baking tray and brush the tops with milk. Bake for 12 -15 minutes, until they are well risen and golden.
