method
1. Cut the cod into bite sized cubes and wrap a piece of pancetta around each cube.
2. Thread the wrapped fish pieces on to four skewers, alternating them with the shallots, cherry tomatoes and bay leaves.
3. Spray each kebab with low fat cooking spray and grill for 10 minutes, under a medium heat, turning frequently until the fish is cooked through.
