method
1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.
2. Prick the potatoes all over Bake them for I hour until they are tender Slice them in half and, using a small teaspoon, carefully scoop out the flesh into a small bowl. Reserve the potato skins.
3. Add the drained flaked tuna, low fat soft cheese, sweetcorn and seasoning to the potato flesh and stir well.
4. Whip the egg white until it forms stiff peaks and fold it into the potato and tuna mixture. Spoon the mixture into the potato shells and return them to the oven for 15 minutes to heat through.
