method
1. Heat a large, heavy based saucepan and spray it with low fat cooking spray.
2. Add the onion, garlic and chicken portions.
3. Cook for 5 minutes, turning the chicken portions, so that they are evenly browned all over.
4. Add the chopped tomatoes, balsamic vinegar chicken stock, whole mushrooms and seasoning and bring to the boil.
5. Reduce the heat, cover and simmer for 1 1/2 hours, by which time the chicken should be very tender
6. Scatter with the basil before serving.
