1. Preheat the oven to Gas Mark 5/190°C/fan oven 170°C.
2. Line a baking tray with non stick baking parchment.
3. Make slits along the length of each chicken breast to form deep pockets.
4. Place the blue cheese in a small bowl with the mayonnaise and seasoning, and mix together thoroughly.
5. Spoon equal amounts of the mixture into each chicken breast pocket.
6. Wrap a slice of wafer thin ham around each chicken breast and secure it with a cocktail stick.
7. Place the wrapped chicken on a baking tray and brush with olive oil.
8. Bake for 25 minutes.
9. Leave the chicken to stand for 5 minutes before slicing in half on the diagonal to serve.
