method
1. Sift the flour into a warmed mixing bowl. Stir in the salt, yeast, sugar basil and olives.
2. Add the water and, using clean hands, bring the mixture together to form a dough ball. Knead the dough on a lightly floured surface for 5 minutes.
3. Place the dough in a clean bowl, cover with a damp tea towel and leave it to rise for I hour
4. Turn the dough out on to a clean surface and knead again for 1 minutes. Shape the dough into eight balls. Arrange them on a non stick baking tray, and cover them with a damp tea towel. Leave to rise in a warm place for about 30 minutes.
5. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Brush the tops of the buns with olive oil and sprinkle the surface with a little freshly ground mixed pepper
6. Bake the buns for 15 - 20 minutes until the bases sound hollow when tapped.
