method
1. Cut avocado pears in halves lengthways, remove stones. Keeping the skin intact, remove the flesh with a melon-ball scoop or cut into dice.
2. Coat with French dressing to prevent discolouration.
3. Peel oranges and cut into segments, removing all the skin and pith.
4. Mix avocado balls and orange segments together with enough French dressing to moisten.
5. Pile into avocado skins.
6. Place lettuce leaves on a serving plate and arrange filled avocado pears on top.
for the french dressing
In a screw top jar combine 2 tablespoons white vinegar with 6 tablespoons olive oil, a pinch of sugar, salt and finely ground white pepper to taste.
Screw lid on tightly and shake vigorously until combined.
