1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.
2. Place the oil in a 23 cm (9 inch) square non stick baking tin.
3. Arrange the sausages, carrots, onion and celery in the base of the tin.
4. Roast in the oven for 20 minutes.
5. Meanwhile, make the batter Sift the flour and salt into a mixing bowl, and make a well in the centre.
6. Add the egg, milk and herbs and whisk to form a smooth batter
7. Remove the sausages and vegetables from the oven and pour over the batter
8. Return the tin to the oven for 20 - 25 minutes, until the batter is well risen and deep golden.
9. Cut the toad in the hole into quarters and serve hot.
