method
1. Place grapefruit in refrigerator for 1 to 2 hours before required.
2. Cut grapefruit in halves. Remove flesh, divide into segments and replace in grapefruit skins.
3. Shell and devein prawns and season lightly with salt and pepper.
4. Arrange on top of grapefruit and coat with mayonnaise.
5. Garnish each serving with an unshelled prawn and a parsley sprig and serve immediately.
