Brandied Tomatoes

ingredients

serves: 4 - 6
4 - 6 firm, ripe tomatoes
1/2 cup olive oil
1/2 teaspoon salt
1/2 teaspoon caster sugar
1 tablespoon finely chopped parsley
1 tablespoon finely chopped fresh basil
1 teaspoon grated lemon rind
3 tablespoons brandy

method

1. Place tomatoes in a bowl and cover with boiling water.

2. Leave for 30 seconds, drain, and cover with cold water. Drain again and peel off skins.

3. Thinly slice the tomatoes and arrange in a shallow serving dish.

4. Combine remaining ingredients and pour over tomatoes.

5. Cover and stand for 30 minutes at room temperature before serving.

6. Serve with crusty bread or bread rolls and butter.

7. Cooking tip: If fresh basil is not available, soak 1 teaspoon dried basil in 1 tablespoon of the brandy for 10 minutes.
