This extremely refreshing drink is very fashionable in the warmer parts of America, where it is usually drunk outside on a 'deck', or verandah. With this method of making iced tea, the tea bags are infused in cold water, which creates a more delicate flavour. You can use other teas apart from Assam - Lapsang souchong and Darjeeling make good alternatives.

9 pure Assam tea bags
3 pints (1.7 litres) still natural spring water or filtered tap water
2 large oranges
1 large block ice or ice cubes
1 sprig fresh rosemary
Fresh sprigs of mint
1. Place the tea bags in a large jug and pour in the spring water. Cover and leave to infuse for 2 - 3 hours. Stir well and remove the tea bags. Slice both the oranges.
2. Put the ice into the jug, add the orange slices, rosemary and mint and allow to stand in a cool place for 10 minutes before serving in glasses.
