Coffee a la brulot

ingredients

makes 6 servings.
1 orange
2 sticks cinnamon about 5 cm (2 in) long
4 whole cloves
3 lumps sugar
150 g ml (1/4 pt) Cognac
500 ml (1 pt) double-strength black coffee

method

1. Pare off the coloured part of the orange skin in one long, thin ribbon.

2. Place the rind, cinnamon, cloves and sugar in a pan, pour in the Cognac, warm and ignite it.

3. While the brandy is still flaming, add the coffee; as the flame subsides, ladle the coffee into coffee cups.
