300 ml (1/2 pt) milk
3 eggs, separated
75 g (3 oz) caster sugar
90 - 120 ml (6 - 8 tbsps) brandy
90 - 120 ml (6 - 8 tbsps) rum
150 g ml (1/4 pt) single cream
method
1. Heat the milk without boiling.
2. Whisk the egg yolks and sugar together for a few moments, then add the brandy and rum slowly.
3. Fold in the cream and pour on the heated milk.
4. Whisk the egg whites stiffly and fold into the nog.
