Apple cider cup

ingredients

makes about 1.7 litre (3 pt).
2- 3 dessert apples
juice and thinly pared rind of 1 lemon
8 cloves
60 ml (4 tbsps) sugar syrup
1 litre (2 pt) dry cider
1/2 syphon soda water

method

1. Peel, core and slice the apples and put into a bowl with the lemon juice and rind and the cloves.

2. Heat the sugar syrup with about 300 ml (1/2 pt) of the cider;

3. when boiling, pour over the ingredients in the bowl and leave to cool.

4. When cold, add the rest of the cider and the soda water.
