method
1. Trim the beans, discarding the tops and tails.
2. Bring a saucepan of water to the boil, add salt and the beans and cook for about 6 minutes.
3. Drain, then rinse the beans under cold water to keep them green.
4. Heat the oil in a large pan and fry the garlic and anchovies over a low heat, mashing the anchovies with a fork to cream them, for about 3 minutes until translucent.
5. Add the beans, cover and cook for 3 minutes more, stirring occasionally, to blend the flavours.
6. Arrange on a platter and serve immediately.
