300 g (10 oz) cress or Watercress (salad cress)
90 g (3 oz) soja sprouts
60 g (2 oz) pistachios, shelled
1 tbsp soja sauce
pinch of sugar
3 tbsp extra-virgin olive oil

method
1. Wash and clean the cress or watercress and the soja sprouts.
2. Arrange them in a salad bowl, add the pistachios and mix.
3. Toss the salad with the soja sauce, sugar, oil and salt to taste and serve at room temperature.
