Southern Fried Chicken with Lemon Barbecue Sauce

ingredients

serves 5 - 6
flour
salt
pepper
1 x 1.5 kg (3 lb) chicken, cut into joints
3 oz (75 g) pork or bacon fat

for the sauce

5 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons grated onion
1 garlic clove, crushed with 1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried thyme

method

1. First make the sauce. Mix together all the ingredients, cover and leave for at least 8 hours.

2. Mix the flour with salt and pepper and use to coat the chicken joints.

3. Melt the fat in a frying pan, put in the chicken joints, cover and cook gently until the joints are tender and well browned.

4. Turn them once during cooking. Serve with the sauce.
