Swedish Herring

ingredients

serves 4
4 large potatoes, peeled, cooked and sliced
3 onions, thinly sliced
8 small herrings, filleted
8 anchovy fillets (optional)
6 large tomatoes, sliced
2 oz (50 g) fresh breadcrumbs
1 tbls (15 g) 1/2 oz butter

method

1. Cover the bottom of a buttered baking dish with the potato slices. Place the onion slices on top.

2. Roll up the herrings, skin side out, with an anchovy in each, if used.

3. Place the rolled herrings on the onions. Cover with the tomato slices, then sprinkle over the breadcrumbs. Dot with the butter.

4. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 to 40 minutes.

5. Serve hot with a green salad.
