Spanish Summer Soup

ingredients

serves 4
1 kg (2 lb) canned tomatoes
1 green pepper, cored, seeded and chopped
4 oz (100 g) mushrooms, chopped
1/2 cucumber, chopped
1 garlic clove
2 onions, chopped
scant 1/2 (us) cup (100 ml) dry white wine
1/2 teaspoon dried oregano
1 tablespoon lemon juice
salt and pepper

for the garnish

twist of lemon
chopped chives
ice cubes

method

1. Put all the ingredients into a blender goblet and blend until a smooth puree. (You may have to do this in two batches.) Chill well.

2. Serve garnished with a twist of lemon, chives and ice cubes.
