Soused Mackerel

ingredients

serves 4
1 carrot, thinly sliced
1 onion, thinly sliced
4 parsley sprigs
4 dill sprigs
4 bay leaves
6 juniper berries
1 teaspoon salt
pepper
juice of 1 lemon
dry cider
4 mackerel, cleaned

method

1. Put the carrot, onion, parsley, dill, bay leaves, juniper berries, salt and pepper in a saucepan and add the lemon juice.

2. Pour over enough cider to cover and bring to the boil. Simmer until the vegetables are soft.

3. Arrange the mackerel in a baking dish and pour over the cider mixture.

4. Cover the dish and bake in a preheated cool oven 150°C (300°F) Gas Mark 2 for 1 1/2 hours.

5. Serve hot, with the strained liquid, or cold with a cucumber salad.
