1 dessert pear, cored and chopped
1 peach, skinned, stoned (seeded) and chopped
1 dessert apple, cored and chopped
2 small oranges or 3 tangerines, peeled and segmented
few grapes, seeded if necessary
1 small cucumber, thinly sliced
sugar
juice of 1 lemon
white wine, fruit juice, lemonade or weak tea
soda water
method
1. Put the fruit and cucumber in a bowl and sprinkle with sugar to taste.
2. Add the lemon juice, then pour over enough wine, fruit juice, lemonade or tea to cover.
3. The fruit must be submerged to prevent browning, so put a plate on top if necessary.
4. Leave in a cool place for at least 6 hours.
5. To serve, ladle into wine glasses and top up with a dash of soda water.
