Horseradish Cottage Dip

ingredients

serves 4
3 tablespoons redcurrant or mint jelly
4 teaspoons creamed horseradish
8 oz (225 g) cottage cheese
2/3 cup (150 ml) 1/4 pt double cream, (heavy cream) whipped
salt
pepper

method

1. Melt the jelly gently, then cool slightly.

2. Add to the horseradish, then mix in the cottage cheese.

3. Fold in the whipped cream and salt and pepper to taste.

4. Serve with cocktail biscuits, sticks of carrot or celery.
