method
1. Melt the butter in a frying pan and fry the onions or leeks until just softened.
2. Tip them into a shallow pie dish or plate and spread out.
3. Mix the eggs with salt and pepper and pour into the dish.
4. Roll out the dough and use to cover the dish.
5. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 to 40 minutes or until the pastry is golden brown.
6. Serve hot or cold.
7. Note: A little chopped bacon can be fried with the onions.
