50 to 75 g (2 to 3 oz) clarified butter
1 kg (2 lb) mutton or lamb, minced
1 small onion, chopped
1 lettuce, shredded
350 g (12 oz) shelled fresh peas
1 cucumber, chopped
4 tablespoons stock
salt
pepper
boiled rice to serve
method
1. Heat the butter in a stew pan and add the, mutton or lamb, onion, lettuce, peas, cucumber, stock, salt and pepper.
