Homemade Low fat Liptauer Cheese recipe

The favourite German, Liptauer cheese, made with curd cheese instead of butter, has a lighter flavour but is just as delicious as the original. Serve it as a dip to begin a meal, with a selection of crudites, such as spring onions (scallions), sticks of cucumber, olives and radishes.

1. Rub the cottage cheese through a sieve and gradually beat it into the curd cheese.
2. Finely chop the gherkin and mix it into the cheeses with the chives, paprika, mustard and dill seeds.
3. Season lightly with the salt.
4. Put the cheese into a serving bowl, smooth the top and make patterns on it with a fork.
5. Put the bowl onto a plate and surround it with olives, radishes, short sticks of unpeeled cucumber and a pile of capers.
