Chestnut Butter

ingredients

makes 450 g (1 lb)
200 g (7 oz) unsweetened chestnut puree
7/8 cup (200 g) 7 oz butter, softened
2 - 3 tbsp (30 - 45 ml) caster sugar (superfine granulated)
15 - 30 ml (1 - 2 tbsp) rum

method

1. Combine the chestnut puree and butter in a bowl and mix until thoroughly blended.

2. Add the sugar and rum gradually, adjusting the flavour to taste.

3. Chill until firm, then use at once, or pot and chill.
