3 mackerel, cleaned
2 slices of brown bread, crumbled
1 egg, beaten
chopped fresh herbs
melted butter or oil
1. Blanch the fish in a bowl of hot water for 1 minute. Drain.
2. Mix together the breadcrumbs, egg and herbs and use to stuff the fish.
3. Grill, basting with melted butter or oil, or fry in butter or oil, or bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 20 minutes or until the fish will flake easily.
