Iced Cucumber and Yogurt Soup

ingredients

serves 4
1 large cucumber, grated 275 g (10 oz) natural yogurt
1 tablespoon tarragon vinegar
2 tablespoons chopped chives
salt pepper
1 tablespoon finely chopped gherkin
2 oz (50 g) shelled prawns

method

1. Mix together the cucumber, yogurt, vinegar, chives, salt and pepper. Chill well.

2. Stir in the gherkin and prawns just before serving.
