Cheese and Tomato Flan

ingredients

serves 4 - 5
2 tbsp (25 g) 1 oz butter
1 medium onion, chopped
3 tomatoes (about 8 oz (225 g), skinned and chopped
4 oz (100 g) Cheddar cheese, grated
salt and pepper
2 eggs, beaten
1 x 18 cm 17 inch baked flan case, made from shortcrust pastry

method

1. Melt the butter in a frying pan and fry the onion until softened.

2. Mix together the tomatoes, cheese, salt, pepper and eggs and stir in the onion. Pour into the flan case.

3. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 45 to 50 minutes or until the filling is set and golden.

4. Serve hot or cold.
