Avocado Creams

ingredients

serves 4 - 5
2 ripe avocados, halved and stoned (seeded)
3 oz (75 g) soft cream cheese
1 garlic clove, crushed (optional)
1 tablespoon lemon juice
6 tablespoons single cream
salt
pepper
1 teaspoon gelatine
1 tablespoon hot water
chopped chives to garnish

method

1. Scoop out the avocado flesh and mash it, then beat in the cream cheese, garlic and lemon juice until smooth.

2. Beat in the cream, salt and pepper.

3. Dissolve the gelatine in the water and mix into the avocado mixture.

4. Spoon into individual serving dishes, cover and chill for up to 2 hours.

5. Sprinkle with chives and serve with oatcakes.
