Apple Stuffing

ingredients

6 cooking (tart) apples, peeled, cored and diced
1/2 stick (4 Tbsp) 2 oz (50 g) butter
salt pepper
1/4 teaspoon grated lemon rind
2 heaped tablespoons sugar
4 oz (100 g) fresh breadcrumbs

method

1. Enough to stuff a 3 to 4 kg (7 to 9 lb) bird

2. Melt the butter in a pan and add the apples.

3. Cook gently, stirring frequently, until they are soft.

4. Remove from the heat and mix in the remaining ingredients.

5. Moisten with a little water if necessary.
