Walnut Cake

ingredients

3/4 cup 170 g (6 oz) butter or margarine
3/4 cup (175 g) 6 oz sugar
4 oz (100 g) walnuts, chopped finely
2 oz (50 g) glace cherries, quartered and floured
1/2 teaspoon vanilla essence
2 cups (225 g) 8 oz flour
2 teaspoon baking powder
2 eggs, beaten
buttercream to finish
walnut halves to decorate

method

1. Cream together the fat and sugar. Add the walnuts, cherries and vanilla essence and mix well.

2. Sift the flour with the baking powder and add to the creamed mixture alternately with the eggs.

3. Turn into a greased 20 cm/8 inch cake tin and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 1 to 1 1/4 hours.

4. Cool in the tin.

5. Turn out and cover the top of the cake with buttercream.

6. Decorate with walnuts.
