1 1/2 cup (230 g) flour

method
1. Mix the flour, sugar, fruit, lemon rind, butter, baking powder and baking soda.
2. Add the beaten egg and the buttermilk to make a nice soft dough; beat well and pour into a greased 2-pound loaf pan.
3. Bake at 300°F (150°C) gas mark 2. for 1 hour, or until it tests done with a skewer.
